I’ve written before about this fun program, Foodie Pen Pals – check it out, you can opt in a month at a time, so you’re not signing your life away to participate.
This month my Foodie Pen Pal was Carly from Maryland. She treated me to a selection of her favorite items including:
- Cheddar and Garlic Biscuit mix
- Rolo candies
- a selection of her favorite teas
- Pumpkin Spice Latte mix – Carly shared with me that she actually puts this in plain oatmeal to flavor it. I’m so excited to try it out!
I made the biscuits and had it with pork chops from the slow cooker aaaaand I made fake fried Okra.
I stole the okra idea from Bobby Deen’s cookbook where he lightens up his mom’s heavy southern recipes. I didn’t bother to get the book out to make it – but pretty much just cut the fresh okra lengthwise (borrowed this style from some I had for lunch at Steven Satterfeld’s Miller Union), added a tiny bit of salt and tossed in cornmeal. I sprayed it all with cooking spray once it was on the baking sheet and tossed in the oven. Texturally it was different from fried, but the taste was similar AND I convinced hubby to try it who now likes okra!
